Spicy cucumber lassi

Buttermilk is the best drink to beat the scorching heat of the hot summers. And cucumber eaten raw or in juiced form quenches thirst and always keeps your body hydrated,as it is rightly said"as cool as cucumber". Combining this makes a ideal drink for the summer. One can refrigerate this and can have the chilled drink number of times a day. It has a lot of health benefits also.
Ingredients-
yogurt - 2 glasses
cucumber- 2 peeled and chopped into cubes
Garlic cloves- 2
Ginger- a small piece finely chopped
Salt- to taste
sugar- 1tsp(optional)
Asafoetida/hing- a pinch
Method-
Blend all the ingredients together and serve chilled.

P.S. You can also add few drops of lime juice and a little chaat masala to enhance its taste and flavour.

Rich bread pudding/Shahi tukre

My sister had this dessert at her friend's place and liked it so much that she wanted me to make it for her again. I thought it should be something really good as she is never too fond of sweets.So I got the recipe from some magazine and made it for her. It was definitely very tasty and I felt I was eating something like rasmalai. :D

Ingredients-
Bread slices- 8
Milk-1litre
sugar-200gm
ghee for frying
Cardamom powder- 1tsp
Saffron strands- few
Dryfruits/nuts of your choice(I used cashews,almonds,raisins)

Method-
Cut the edges of the bread and deep fry them in ghee till they get golden in colour.
Heat milk and sugar together in a wide thick bottomed pan till it forms a syrup.
Add cardamom powder and saffron strands. Add the deep fried bread slices into it. Cook them in slow flame till the bread absorbs the milk.
Fry the nuts in ghee and garnish the pudding with the nuts. Serve chilled.

You could also -
*Add cream on top before serving.
*Sprinkle some rose essence.
*Garnish with rose petals.

Instant healthy dosa

I have been seeing lots of very impressive dosa varieties being posted in many blogs. After googling for some dosa recipes , I decided to combine flour,oats and carrots to make a instant mixed dosa.It tasted good and was quite filling, at the same time very healthy too. I am sending this to Srivalli's dosa mela and also to WBB#20- balanced breakfast hosted by Mansi.

Ingredients-
Rice flour - 1 cup
wheat flour- 1cup
oats- 1cup
grated carrots-1 cup
curds- 1 cup
Green chillies 3 or4 finely chopped
cilantro- chopped
whole black pepper- few
Salt- to taste
Oil - to brush on dosas
Method-
Mix all the ingredients. Add water and make the consistency to that of regular dosa batter. Make dosas by spreading the batter in circular movement on a hot dosa tava.Add little oil to the sides. Flip the dosa and cook both the sides.
Serve hot with any chutney.
