I have been trying a lot of soup varieties nowadays instead of the regular tomato soup. So I have used ingredients like mushrooms and asparagus which I never bothered to buy earlier and very reluctant to do so. Sweet corn is something which I buy quite often, but never used them in soups. This time, I had this corn lying in my fridge for quite sometime until finally I decided to make the soup. So this is how I made.
Ingredients-
Sweet corn-2 nos
Ginger garlic paste-1tsp
Corn starch- 2tsp
Soya sauce (I used light)- 1tbsp
vinegar- 1tsp
Salt to taste
Pepper- 1tsp
Method
Cook the corn well and seperate the kernals. Heat 1tsp oil in a pan. Add ginger garlic paste and stir for few minutes and add the corn and stir well. Reserve a few kernals and grind rest of them.Then boil 4 teacups of water and add the ground mixture. Add rest of the ingredients till it becomes of a thicker consistency. Add the reserved kernals and mix well.
Serve hot with buttered bread/toast.
