Chakchouka

This side dish is a combination of bell peppers and eggs , a Tunisian /Algerian creation. I found this recipe in a book called "The Chiles and Peppers cookbook". I made it as mentioned in the book, but I found the way of addition of eggs bit different in other books. You can directly crack the egg into the pan and cook till the white portion is set or you can beat the eggs and add to the vegetables and mix well. So I am not sure how the authentic chakchouka looks like, but anyway, tasted good and we enjoyed it.

Ingredients-
Extra virgin olive oil- 4-5 tbspn
Onion- 1 large finely chopped
Green pepper- 1 cored ,seeded and cut into strips
Yellow/red pepper- 1 cored,seeded and cut into strips
Garlic - 1 clove crushed
Tomato- 3 coarsely chopped
Eggs- 4
Salt- to taste
Pepper- freshly ground -2 tsp

Method-
Heat olive oil in a shallow pan. Saute onion and peppers for 10 minutes. Add the garlic and tomatoes and cook for another 8-10 minutes,stirring.
Beat the eggs in a bowl and season with salt and pepper. Add to the pan and stir over heat until the vegetable and egg mixture in creamy and soft.
Serve this hot with pita bread. We had them with the regular rotis.
